Eggtc. in Shawnee is one of those comfy restaurants that feels like an extension of home.

The coffee is served in oversized ceramic mugs, the walls are painted yolk-yellow and warm crimson, the service is fast and friendly, and the music is a mix of delightful throwbacks. (On a recent Friday afternoon, song selections included classics from New Edition, Gloria Estefan and Peter Gabriel).
Diners linger long after the last scrap of eggs Benedict to watch the news, gossip, or conduct a business meeting — and they come back often.
Gregg Johnson also owns an Eggtc. restaurant in Kansas City. He is the founder of Minsky’s Pizza and Il Centro Osteria.
At least 75 percent of the customers at Eggtc. are regulars, says manager Alisha Harris, who worked at the Eggtc. in Kansas City before the Shawnee location opened in 2010. At Eggtc., regulars are called “great eggs” and recognized with mini-bios on the restaurant’s website.
For first-timers at Eggtc. in Shawnee, it can take a few minutes to fully assess the four-page menu, stuffed with almost every breakfast and lunch option imaginable.
There are 10 unique omelets, three kinds of French toast, four breakfast sandwiches, 10 lunch sandwiches and six salads to choose from. Want coffee? There are about 15 options, from a classic cup of joe to an affogato — that’s a scoop of vanilla ice cream with espresso.
“We definitely try to be diversified,” Harris says.
Eggtc. offers something for every appetite. For athletes looking to refuel, there’s a popular Finish Line egg-white omelet ($8.49) filled with feta, turkey sausage, avocado, spinach and diced tomatoes, as well as oatmeal served with fresh fruit ($5.99) and salads such as the Strawberry Fields ($8.49), spinach topped with sliced berries, candied pecans and goat cheese.
If you’re in the mood to indulge, spring for the bestselling Southwestern Benny ($7.99) — that’s two buttery homestyle biscuits topped with spicy sausage patties, scrambled eggs and chorizo gravy. It’s the kind of breakfast that leaves you feeling satisfied until dinnertime. On the sweet side, Eggtc. serves a light and fluffy French toast ($4.69 for a stack of three) made with sourdough bread that has become the house specialty.
The breakfast and lunch restaurant makes from-scratch blueberry muffins and chili, which goes in the Chili Cheese omelet ($8.49) and atop the Farm Burger ($8.49) with a fried egg, bacon, potatoes and sauteed onions.
Eggtc. offers customers plenty of ways to customize their order. So you can build your own omelet or add a variety of mix-ins (chocolate chips, ricotta cheese, granola) to pancakes. Or you can order one of Eggtc.’s fun twists on the traditional sweet stack. Recent specials have included carrot cake and red velvet pancakes.
Harris has been known to get creative behind the bar, which stocks a surprisingly extensive selection of beer and wine for a breakfast joint.
“Right now we have a frozen drink special called a Mudslide made with Kahlua and vanilla vodka,” Harris says. And recently, she invented a drink called the Shawnee Sunrise. The “breakfast shot,” a blend of fresh-squeezed orange juice and Absolut vodka, is served in an orange with a sugar rim.
“I invented it for a customer who turned 21 at the counter,” Harris says.
If all of that is a little too overwhelming at breakfastime, celebrate simplicity (and National Egg Month) with the Classico ($7.99), a breakfast plate with two eggs, breakfast potatoes, toast and your choice of meat. Just choose between bacon, turkey bacon, sausage patty, sausage link, chorizo — and about five more options.
