What do bananas and eggs have in common?

When it comes to vegan baking, a half a mashed banana can stand in for a whole egg.
The Stars Granola Bites use the tropical fruit to side-step conventional baking ingredients such as flour, sugar and eggs. The result is a chewy, low-calorie, low-fat pick-me-up or quick breakfast-on-the-run.
Bonus: The recipe works for those who follow a vegan or sugar-free diet, and they are gluten-free, if the oats you purchase have been processed in a gluten-free facility. Be sure to check the label.
• Shopping tips: Applesauce packed in an individual lunch-box size container is the right amount for this recipe.
• Cooking tip: For the most even baking, bake one sheet at a time in the center of your oven.
• Storage tip: Bake and cool the granola bites, then pack in individual plastic bags to eat on the way to school or work.
Makes 20 to 22 bites
3 ripe bananas
2 cups old-fashioned rolled oats
1 (4-ounce) container applesauce
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup dried cranberries
Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
In a medium bowl, using the tines of a fork, mash bananas until a smooth consistency. Stir in oats, applesauce, cinnamon and vanilla until blended. Add cranberries and stir until blended. Drop by tablespoonfuls onto prepared cookie sheets. Flatten with the back of a flat, metal spatula to resemble a cookie shape. Bake 20 minutes. Remove to a rack to cool. Store in cookie jar or an airtight container for up to 3 days.
Per bite, based on 20: 53 calories (10 percent from fat), 1 gram total fat (trace saturated fat), no cholesterol, 10 grams carbohydrates, 1 gram protein, 1 milligram sodium, 1 gram dietary fiber.
