Spaghetti Squash Casserole with Turkey Italian Sausage A casserole refers to a type of dish as well as the food served in it. A modern food staple in Midwest cooking, casserole derives its name and heritage from an Old World French term for saucepan. Sheri Parr, chef/owner of The Brick in the Crossroads district, offers a refreshing interpretation of this catch-all dish.
Cut a 4-pound spaghetti squash in half lengthwise, scoop out seeds, drizzle olive oil on the flesh, add a touch of salt and pepper, and place cut side down on a baking pan. Bake 45 minutes at 350 degrees until tender. Remove squash from oven and let cool slightly. Remove squash from pan and, using a fork, scrape out flesh into pan.In a large bowl, combine the squash with 2 cups ricotta cheese, 1 egg, 4 cups chopped spinach, 2 minced garlic cloves, 1 teaspoon salt, 1/8 teaspoon pepper and 1 pound cooked turkey Italian sausage. Transfer mixture to a 9-by-13-inch baking dish, top with 2 cups diced tomato and sprinkle 2 cups grated mozzarella on top.
