Cool Cucumber Salad
Cucumbers originated in India centuries ago and were gradually cultivated in Asia, Western Europe, the Caribbean and North America. The thin-skinned, semiseedless English cucumber is one of hundreds of varieties. Keith Buchanan, proprietor and tea wallah at The Teahouse in midtown Kansas City, hails from England and uses the English cuke for this simple summer salad.Wash and thinly slice 1 English cucumber. Sprinkle with salt, rub in and let sit for 30 minutes on a plate or shallow bowl; the salt draws excess water out. Pour off salty liquid and add 2 tablespoons cider vinegar, 2 tablespoons sugar or honey, 1 teaspoon dill, and ground pepper to taste. Cover and let marinate in the refrigerator for 30 minutes or longer before serving.Read more Last Bite
